Easy dinner for two:
Salmon with brown sugar and soy sauce

I tend to cook a family dinner made for four, and then eat the leftovers for lunch the next day.
But, sometimes those leftovers go untouched.  So here is a dinner you can make in SERIOUSLY UNDER THIRTY MINUTES! I always have MOST if not ALL of these on hand at all times. Stay tuned weekly for more dinners using these same ingredients!
INGREDIENTS:
1.25 lb of Atlantic salmon
1/8 brown sugar (packed)
1/8 cup of soy sauce
One lemon
Parsley (optional)
Two garlic cloves (minced)

Asparagus
Salt
Pepper
Garlic Poweder
Drizzle of olive oil

Two sweet potatoes
2 tbsp of butter
Sprinkle of brown sugar

Premixed salad of choice

DIRECTIONS:

Pre heat oven to 350degrees
Mix brown sugar, soy sauce, garlic, lemon, salt, pepper, and olive oil in a bowl
Line a baking dish with foil, add salmon, sprinkle salt and pepper, add mixed marinade
Wrap salmon in foil and bake for 30 minutes

MEANWHILE:
  • Slice the remaining lemon, chop 3-4 sprigs of parseley
  • Line broken asparagus on foil, (watch video below to see) sprinkle with salt, pepper, garlic powder, and drizzle with olive oil. Wrap and add to the oven (20 minutes)
  • Scrub and pierce the sweet potatoes and microwave them separately for 5-7 minutes. Wrap the first one in foil to keep it hot while the other one cooks.
    • Once both are done, slit the top, add 1 tbsp of butter and 1 tsp of brown sugar (more if desired)
  • Make your premixed salad

When you're salmon is done, remove from oven, add two lemon slices and your chopped parsley, serve and enjoy!!
